“Honeyed” coffee is the middle ground between a fully washed (beans are removed from cherry then washed and fermented) and an unwashed coffee (beans are dried inside the cherry).
“Honeyed” means leaving some of the cherry fruit or “honey” on the beans as they dry. This gives the coffee a little extra sweetness — but it’s not as fruit-forward and sweet as an unwashed coffee
