Details: This unwashed, or natural process, coffee has a sweet, fruit-forward taste and a light mouth feel. Our importer, Cooperative Coffees, has played a role in bringing this traditional coffee back to region by encouraging farms in Coyona, Peru, to take an unwashed approach like they’d done in the past.
This allows the beans to dry inside the cherries instead of pulping and washing the them right away. Leaving the bean inside can be costly though. About 20% of the harvest is lost to mold and others challenges presented by drying coffee this way. Joe Lozano, owner Third Coast Coffee in Austin, Texas, which, like Bongo, is a founding member of Cooperative Coffees, has visited Coyona twice. Right now he’s working to provide equipment — a solar dryer — that would help save some of the coffee being lost during the drying process.
