Details: The Yirgacheffe region of Southern Ethiopia is one of the best places in the world to grow organic specialty coffee. So we got excited when we found out that we’d be able to purchase unwashed coffee from this region.
Why? The unwashed process allows cherries to dry completely before the seed is milled from the outer pulp and skin. This provides extended contact between the ripe coffee cherry and the seed (or bean), imparting fruitier and often more complex flavors to a brewed cup.

Cooperative Details: The Yirgacheffe Coffee Farmers Cooperatives Union was founded in 2002 and has grown to include 23 cooperative organizations. Their coffee is grown organically on more than 153,000 acres alongside bananas and maize. The lush forest canopy and temperate climate of Yirgacheffe produces very high quality beans that are uniformly balanced, clean and deliciously complex.
